Paleo, Gluten free, Lemon Bars

Lemon bars make the most perfect summer snack or dessert. These bars are perfectly tart and perfectly sweet thanks to meyers lemons. From the crust being a mix of coconut and almond flour to the sweetner being maple syrup this delicious dessert is also healthy! Yay!

Heres what you need for the crust:

1.5 cups of almond flour

1/4 cup of coconut flour

1/4 cup of maple syrup

1/4 cup of melted butter (I used vegan)

1.5 tsp vanilla

1/4 tsp salt

Heres what you need for the filling:

3 eggs and 1 yolk (if you don’t eat eggs, you can use flax seeds!)

3/4 cup of lemon juice (freshly squeezed or store bought)

1/2 cup of maple syrup

1 tsp lemon zest

1 tbsp sifted coconut flour

Now lets get to the fun…

The Instructions:

Preheat oven to 350 degrees

Mix in a bowl all of your crust ingredients until well combined.

Press firmly your crust ingreidents into a square pan and bake for 15 minutes.

While your crust is baking, mix all filling ingredients together in a bowl in the same order as ingredients are listed. (I used a mixer)

As soon as your crust comes out of the oven, pour your filling ingredients on top.

Place filling and crust in oven at 325 degrees and bake for 20 minutes or until filling turns light to golden brown.

Let cool at room temperature for 30 minutes then place in refrigerator for 1.5-2 hours.

Optional: Add as much or as little powdered sugar on top. (Powder sugar isn’t paleo)
